Özet

Bioactive components have garnered attention from consumers and scientists alike due to their antioxidant, antimicrobial, antitumor, and anti-inflammatory properties. To extract these components from natural sources such as plants, vegetables, and fruits, an extraction process is required. However, conventional extraction methods have several drawbacks, such as excessive solvent usage, lengthy extraction times, limited solvent options, and degradation of target compounds. Consequently, there is a need for new extraction methods that can maximize extraction efficiency, preserve the stability of bioactive components, and have minimal environmental impact. Ultrasound-assisted extraction (UAE) is an innovative and environmentally friendly extraction technology that has emerged as a sustainable and economically viable alternative for obtaining bioactive compounds from natural sources. This chapter provides an overview of the fundamental principles and key practices of UAE technology. © 2024 Elsevier B.V., All rights reserved.
