Özet
Immobilized glucoamylase from Aspergillus niger was used to produce glucose from maltodextrin, The enzyme was immobilized using a newly developed combined method of adsorption of the enzyme to gelatinized corn starch and Subsequent alginate fiber entrapment. The immobilization resulted in 22% relative activity and has been active for 21 days without decrease in activity. The optimum conditions were not affected by immobilization and the optimum pH and temperature for free and immobilized enzyme were 4.3 and 60degreesC, respectively, The kinetic parameters were also determined for the hydrolysis of maltodextrin by free and immobilized glucoamylase.
