Fruits and vegetables are rich in phenolic compounds. Phenolic compounds with antioxidant properties have a positive contribution to health. The consumption of phenolic compounds reduces the risk of some cancers, cardiovascular diseases and various age-related degenerative diseases. Natural antioxidants in waste products (seeds, skins, stalks, stems and leaves, etc.) of food industry takes a interest.Phenolic compounds in grapes is more than phenolic compounds of fruits and vegetables. Therefore research has focused on foods made from grapes. Grape seeds in the wine industry generates 15% of solid waste and approximately 60-70% of which are extractable phenolic substances. These wastes are used for extraction of phenolic compounds. In this study, pure water is used as a solvent for extraction of grape seed phenolics. Extraction was carried out from crushed and whole grape seeds at different temperature, time and solid-liquid ratios. Effect of extraction conditions on the amount of extracted phenolic compounds were investigated. The smaller size of particles, time and temperature increases have led to an increase in phenolic compounds extracted. However, more pure phenolic substances were obtained from whole grape seeds. The volume of grape seeds were found with the Solidworks program and consequently, the propagation constants are calculated.
