İstanbul'da satılan sokak sütlerinin mikrobiyolojik olarak incelenmesi

Abstract

Bu araştırmada istanbul'un değişik semtlerinde satılmakta olan 44 adet sokak sütünde toplam mikroorganizma koliform grubu bakterilerin varlığı ve bu grup içinde yer alan türler belirlenmeye çalışılmıştır. Örneklerden 164 adet koliform susu izole edilmiştir. Koliform grubu bakterilerin tanımlanmasında İMVİC olarak belirtilen testler kullanılmıştır. Yapılan testler sonunda örneklerde Enterobacter aerogenesîn en fazla sayıda olduğu belirlenmiştir. Bunu sırasıyla E.coli tip I, E.cloacea, E. coli tip //,£. freundii izlemiş ve 15 suş da tanımlanamayarak diğer koliform grubu bakteriler olarak gruplandırılmıştır. örneklere ait toplam mikroorganizma sayısı ortalama 2.36x1 07 adet/ mi, koliform grubu bakteri sayısı ise 2.66x1 06 adet /mi şeklinde bulunmuştur.

In this research, the total bacteria and the coliform bacteria contents of 44 milk samples which were sold in different parts of istanbul were determined. At the same time, coliform bacteria were isolated from the samples and identified. The IMVIC tests were used to identify the coliform bacteria. 164 coliform strains were isolated from 44 samples. According to the results Enterobacter aerogenes was in the largest number. E. coli type I, E. cloacea, E.coli type II and, E. freundii followed E.aerogenes respectively. Fifteen strains could not be identified and stated as the other coliform groups. In the samples it was found that the number of total bacteria is average 2.36x1 07 /ml and the coliform bacteria is average 2.66x1 06 /ml.
